Raspberry Meringues End of the year dinner dessert

When I started to prepare the recipes for the Christmas Eve, Christmas and New Year's Eve menu, I thought that when we arrived at the desserts we are all very full after the Christmas binge, and that's why I wanted to make a very light, very fresh dessert and from there these were born raspberry meringues, ideal as dessert for the end of the year dinner.

  • 2 egg whites, 2 tablespoons glaze sugar and raspberry syrup

How to make raspberry meringues for New Year's Eve dinner

Making meringues is an entertaining and very easy task if you have a kitchen robot, although it is not so complicated if it is done by hand with rods. The good thing is that this meringue is pure air, since as indicated in the ingredients, with only two egg whites we can make meringue to spare for 8 or more people since the whites increase their volume until almost overflowing.

The secret so that the Meringue is very firm and fluffy is to use very cold eggs, fresh out of the fridge. The first thing we will do is separate the whites from the yolks, and the latter we store in a glass covered with a kitchen film inside the fridge for other preparations.

We put the egg whites in a bowl and begin to beat with the rods or with the robot. We let the children regulate the speed of the robot and look out to see the result. At first, almost no changes are noticed but after a few minutes, the Clara starts to foam and to change from transparent to a whitish color.

At that time the children can add the icing sugar little by little while we (or the robot) continue beating. Next, the white begins to thicken and increase in volume and begin to form "spikes" when beating. There we can add the syrup that will add flavor and color to our meringues, while we continue beating until we get a firm, thick and well-mounted cream. The kids are going to suck their fingers, and we can let them put a finger and try.

If we want to consume them at the moment, we can serve the meringues in bowls and thus take them raw. They seem delicious to me this way. If we prefer to take the dry and crispy meringues on the outside, we put the meringue in a pastry bag and we put sticks in a baking tray covered with baking paper and slowly dry them at 120º until they are to our liking.
