Monkfish fingers with lime mayonnaise. Recipe to enjoy with the family

For dinner today, we will prepare some originals monkfish fingers with lime mayonnaise, a recipe to enjoy the family with the fish, with the fresh flavor so special that brings the lime and the crispy breaded that I will tell you now.

It is a very easy and fast recipe that also children like very much, who are getting used to their taste since childhood, thanks to the Crispy and tasty touch that we get in this recipe. Do not forget to try it, either with monkfish or with other fish such as hake, sea bass or any fish you like.

Ingredients for 4 people

  • 500 g monkfish in cheeks, breadcrumbs, panko -pain grated in Japanese flakes-, two eggs, olive oil, salt
  • For lime mayonnaise: 1 glass of sunflower oil, 1 stream of lime juice, 1 egg, salt

How to make monkfish fingers with lime mayonnaise

To make the mayonnaise, we put the egg in the blender glass and add a pinch of salt and olive oil. We put the blender down and go crushing without moving the blender at any time until the mayonnaise is linked. Then we go up to finish. We add the drizzle of lime juice, we give another couple of touches with the blender and reserve it in the fridge.

To make the fingers or monkfish sticks we cut the monkfish cheeks into more or less elongated pieces and we passed them by flour, beaten egg and by the breadcrumbs that we will have mixed with panko in equal parts.

This Japanese breadcrumbs are found on large surfaces and are supercrunchy, giving our fingers the appearance of croquettes. In addition it does not suck almost oil so that even being fried it is lighter.

Once the fingers are coated, we fry them in very hot olive oil to encourage the crunchy touch that children will like so much. Inside the fish is juicy and tender, ideal for a family dinner. Before serving, drain them well in a dish with paper towels to remove the remaining frying oil.
